Nutrient Components and Physicochemical Properties of Korean Sweet Potato according to Cultivars

Abstract
This study was performed to analyze the nutrient components and to measure the physicochemical properties of 23 Korean sweet potato cultivars. Proximate composition, free sugars, organic acids, dietary fiber of sweet potato were anaylzed and water binding capacity, oil absorption and pasting characteristics were measured in this study. The proximate composition was the highest in Happymi and was higher the colored sweet potato than the general sweet potato(p<0.05). Sucrose content was the highest among the free sugars in general cultivars and yellow/orange colored cultivar. The major organic acids were oxalic acid, citric acid, malic acid, succinic acid, fumaric acid, acetic acid. Oxalic acid and citric acid were high in purple colored cultivars, malic acid were high in yellow/orange colored cultivars. Each total dietary fiber contents of general and colored cultivars was 7.51-13.94%, 13.04-16.97% and had no significant difference. The water binding capacity and oil absorption of Juhwangmi was the highest in all cultivars(p<0.05). The highest peak of sweet potato powder showed significantly difference as 12.50-1342 cP(p<0.05). Breakdown of Sincheonmi was 512 cP, which was significantly the highest value(p<0.05). Setback of Geonpungmi measured significantly low as 6.0 cP(p<0.05).
